Enjoy PB&Js in a New Way with this Peanut Butter and Jelly Smoothie Bowl

The all-American peanut butter and jelly sandwich has sustained our children through countless school lunches and afternoon snacks for years. PB&J is nourishing, kid pleasing, and filled with familiar flavors, so it’s always been a staple in our homes. This summer, we began work on our third book: The Smoothie Bowl Coloring Cookbook. Coloring books are wildly popular these days, so as dietitians and food bloggers, we decided to create a coloring book of our own filled with healthy recipes and corresponding whimsical food designs. Talk about a creative way to excite kids about cooking and eating right!

For the book, we partnered with our friends at the National Peanut Board to create two recipes: Peanut Power Smoothie Bowl and this one for PB&J Smoothie Bowl.

Coloring Cookbook

Smoothie bowls are thicker than traditional smoothies, so you can eat them with a spoon for a satisfying breakfast or snack. They’re super fun for kids to eat … and to decorate, since even the tiniest toddlers at your table can help to dress up the tops.

Peanut Butter & Jelly Smoothie Bowl

Makes 2 to 3 Servings

1 sliced and frozen banana
½ cup 2%-fat plain Greek yogurt
½ cup red grapes
½ cup frozen strawberries
¼ cup 100% grape juice
2 tablespoons peanut butter
1 tablespoon chia seeds
Optional toppings:
Peanuts, strawberries, red and green grapes

1.. Place the banana, yogurt, grapes, strawberries, grape juice, peanut butter, and chia seeds in a blender and blend until smooth.
2. Pour into individual bowls and garnish with your choice of optional toppings.

Per Serving (1 cup): 290 calories, 11g fat, 2.5g saturated fat, 43g carbohydrate, 105mg sodium, 5g fiber, 11g protein, 50% vitamin C, 15% calcium
