Serve Up Superfoods this Summer with Peanuts!

Dark leafy greens, and brightly colored berries and fruit fill the shelves at farmers markets in the summer. But as you load your basket with that amazing produce, you might wonder what to do with all of these Superfoods. Here’s a suggestion: pair them with peanuts!

Peanuts are also a Superfood with 30 vitamins and minerals, so combining them with other nutrient-dense produce creates a nutritional powerhouse! We wanted to start the season of Superfoods off right, so we took note from Dr. Julia Nordgren’s kale and peanut vinaigrette cooking video, and asked her and @PeanutRD to join us in a #PeanutPower Superfoods Twitter Party hosted by blogger Liz of (@BlueViolet) to discuss bringing together peanuts and other Superfoods.

Party participants offered great ideas and NPB gave away more than $300 in prizes! Here are some of the highlights from the discussion:

What’s in snack? Well if it has peanuts and other Superfoods, you can be sure it will have flavor and nutrition. And for the young, picky-eaters, sneaking in some Superfoods with peanuts or peanut butter is a good way give them something they’ll eat without knowing its good for them.
