Citrus Salad with Mint and Peanuts
1 ruby grapefruit
1 white grapefruit
1 tablespoon of mint, chopped
1 tablespoon of peanuts, roasted
With a knife, cut away the peel and white pith of the grapefruits and orange. Cut into segments. Gently toss with the mint and peanuts.
Note: You can cut the peel and pith from the fruit up to 12 hours in advance. Seal tightly in a container and keep in the refrigerator until ready to slice.
