Fresh Peanut Salad

Ingredients

1/3 cup rice vinegar

¼ cup sugar

½ teaspoon salt

3 tablespoon water

2 cucumbers, preferably English or hothouse, halved lengthwise and thinly sliced

¼ cup small yellow onion, thinly sliced

10 mint leaves, chopped

Jalapeno chilies, thinly sliced, 1 each or to taste

6 sprigs cilantro sprigs, fresh, chopped

2 tablespoon peanuts, roasted, chopped, for garnish

1 tablespoon shallots, fried, optional

Directions

Combine the rice vinegar, sugar, salt, and water in a mixing bowl until well blended. Add the cucumbers, onion, mint, chili, and cilantro and toss well. Let the mixture sit for fifteen minutes. Garnish with chopped peanuts and fried shallots if using.
