1 Fresh Red Bell Pepper
1 Fresh Avocado
1 Fresh Sliced Mango
1/2 Cup Cream Cheese
1 Cucumber
1/4 Cup Peanut Chili Sauce

In this recipe we see a crossover between the power of peanuts combined with the ever-popular sushi dish. The Crunchy Peanut Sushi includes peanuts which athletes eat for recovery, along with vegetables and fruit.

Here's how to make your very own Crunchy Peanut Sushi:
- Deseed and julienne pepper, cucumber, avocado, and set aside.
- Roll julienned ingredients including cream cheese in sushi rice.
- Once sushi is rolled thinly slice mango and layer onto sushi roll.
- Wrap sushi roll into plastic wrap and refrigerate.
- When ready to serve garnish with Peanut Chili Sauce.
