Peanut Butter and Jelly Muffins
Ingredients
- 1 cup applesauce (or mashed banana)
- 1/2 cup peanut butter (creamy or crunchy)
- 1/4 cup maple syrup
- 2 eggs
- 1 tsp. vanilla extract
- 1 1/2 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/4 cup jam (strawberry, raspberry, or any other fruit jam)
Directions
- Preheat oven to 350 degrees F.
- Line 12 cup muffin tin with muffin liners.
- In large bowl whisk eggs, applesauce or bananas, peanut butter, maple syrup, and vanilla until smooth.
- Add to the wet ingredients, flour, baking powder, and salt. Combine until fully incorporated.
- Scoop the batter into muffin liners about 3/4 full.
- Add 1 tsp. jam on top of each muffin – use the spoon to swirl the jam into the top layer of the muffin batter.
- Bake for 25 minutes or until toothpick comes out clean, then let cool for 3-5 minutes, then transfer the muffins to a wire rack to cool.
- Serve muffins with fresh fruit, cup of milk, or other preferred breakfast sides.
